raw burrito wraps

raw nori wraps with red cabbage, cucumber, carrots, zucchini & spicy dipping sauce
I forgot to add avocado but the recipe was wonderful even without my creamy green friend. Having said that, if you've got an avocado handy, use it. I ran out of nori sheets so I used rice paper to wrap some as well. Rice paper is so fun and easy to use, and it lets you get a sneak peek of what's inside your roll! Colours abound in the plant kingdom.
raw nori wraps with red cabbage, cucumber, carrots, zucchini & spicy dipping sauce
Wraps:
1/2 head red cabbage
1 carrot
1 small zucchini
1/2 cucumber
2 kale leaves
1 avocado
3-4 nori sheets and/or rice paper sheets
Sauce:
1 tablespoon tahini
Chili powder, to taste
1 tablespoon miso
2 dates
Juice from 1/2 lemon
1 small garlic clove
Water, as needed to make it creamy and smooth
Make the sauce by blending all the ingredients together until smooth. Now make your wraps: shred the veggies thinly on a mandolin, but chop the cucumber by hand. Tear up the kale leaves and slice the avocado. Lay your desired fillings on one side of your nori sheet, and on the opposite side spread a little sauce to seal together the ends when you roll it up. Roll everything up tight and set aside. If you're using rice paper, dip the paper in hot water until it's pliable, then place everything you want in the middle. Wrap up like a burrito. Dip your wraps in your sauce and get this party started.
BBQ kale chips
oh my goodness gracious holy cats. the first step to recovery is admitting you have a problem. i have already done the hardest part. buuuut... I JUST CAN'T STOP EATING KALE CHIPS!
i could have a worse addiction though; like... almost any other substance actually. kale chips are uber healthy. you know how good kale is for you, and when you dehydrate it - you concentrate all it's incredible life-giving nutrition. just make sure to have them with a big glass of water, because obviously you're also taking out the H20 when you "DE-hydrate".
we bought beautiful kale from the farmer's market on saturday just for kale chips. ain't it perdy?
(the answer is yes.)
the sauce for these is mega good. i used liquid smoke so they taste like barbeque chips. get ready to have garlic breath too - it's totally worth it. as usual, over half of them were devoured (or should i say inhaled) by time they were actually done... like i said: i have a problem.
cheesy barbeque kale chips: makes a huge bowl, but only serves one :)
dressing:
2 cups walnuts
1/2 cup nutritional yeast
2 tablespoons mustard
2 tablespoons agave syrup (or 1/2 cup dates)
1 tablespoon apple cider vinegar
3 tablespoons tamari
2-4 garlic cloves
1 tablespoon liquid smoke
1 teaspoon each of chili flakes, paprika, salt & pepper
1/2 cup water
chips:
3 big bunches of organic, local kale!
to make the dressing, blend all the ingredients until smooth. tear up the kale leaves (leaving the stems out) and throw them all in a giant bowl with the dressing. massage in with your hands until each leaf is covered. i eat so many just like this. it's like the greatest salad ever. BUT YOU MUST RESIST. now put them on dehydrator trays and dehydrate for 1-3 hours until they're dry and crispy. you'll have to check on them. you can also use your oven at it's lowest temperature and put them on baking sheets.
i'm always listening to music when i write my posts and - as i should be - in love with whatever song from my library is playing. which is why i HAVE to share it with you. hence, my links to songs lately. i think i'm gonna make that a habit. here's some police and modeselektor.

curry with tofu & grilled vegetables
this curry is delish! mom wasn't here for dinner so it was my turn to make something. brown rice had been cooking and i figured some spicy curry with broccoli, leftover grilled veggies and tofu would hit the spot; since it has been raining all day here.
everyone said it was really great, in fact - jasper used the word "addictive". can't argue with that. we all took seconds. i'm glad it was so tasty because i didn't use any conventional curry recipe. i didn't even have curry paste. so if you're in the mood for warming curry, crispy tofu, tender veggies and rice; try out this funky recipe!
yellow curry with tofu, veggies & rice: makes a big ole pot
1 onion
4 garlic cloves
1 head broccoli
1 grilled red pepper
2 grilled zucchinis
2 packages tofu
1 can coconut milk
6 cups vegetable broth
3 tablespoons raw sugar (or other sweetener)
3 tablespoons tamari (or soy sauce)
3 bay leaves
3 tablespoons curry powder
1 tablespoon each of coriander, paprika, cumin, turmeric, garlic, and onion powder
1 teaspoon each cinnamon, chili flakes, and dill
1/2 teaspoon chili powder
prepare the tofu: sautee it on med-high heat with a bit of olive oil, rice wine vinegar and tamari (soy sauce) until it browns. set aside.
chop all the veggies. in a large pot, sautee the onions, garlic and all the spices together with 2-3 tablespoons of olive oil and 1 tablespoon of rice wine vinegar until they're translucent and softened. add the remaining ingredients, including the tofu and veggies. let simmer on low heat for 30 minutes or so, until the broccoli is cooked enough for you. see you if you like it! curry is easy to change.
serve with whole grain brown rice in bowls with chives, hot sauce, sweet basil, and gypsy kings. yeah man!
oh and i have some news: I GOT TWITTER! it's mainly to get my blog out there more (by "there", i mean the world wide web). so follow me, please! it's so weird that i have a blog and a twitter account now. i feel like such a participating member of my generation, a feeling that is rare for me. i'm a bit of an enigma... if you haven't noticed.
RAW PASTA
I love noodles.
It's so satisfying, nutrient-dense, low-calorie and RAW, in every sense of the word.
I don't really use recipes when preparing raw food (as you probably know by now) so for the following recipes, feel ABSOLUTELY FREE to play them with them as you like. There's endless possibilities for sauce ideas - just like for smoothies and salads. The combinations are infinite.
For the pasta: use any wide, fairly long vegetable - zucchini is the perfect example - and slice it on your spiral slicer or mandoline, into noodles. Set aside. Now for the sauce =)
Avocado Hemp Sauce:
1/2 avocado
1 clove garlic
3 Tb tamari
Water or non-dairy milk, as needed
Salt & pepper, add other spices if you wish
2 Tb hemp seeds
Blend all ingredients except hemp seeds until smooth. See if you like the taste and consistency. Stir in hemp seeds and pour over noodles. Let them sit for a few minutes, then enjoy! I like to add hot sauce and raw marinated veggies.
Garlic Miso Sauce:
2-3 Tb miso
1 clove garlic
2 Tb tamari
1-2 Tb rice vinegar
1-2 Tb almond butter
2 Tb black sesame seeds
Water as needed
Blend all ingredients except sesame seeds until smooth. See if you like the taste and consistency. Stir in sesame seeds and pour over noodles. Let sit for a few minutes then eat it up! This recipe is good with broccoli.

Rarely is the kale chip able to be photographed. It lives a short but full life of passion, love and flavour; until it is quickly destroyed because of it's own irresistibility. Tragic for the kale chip - oh so delicious for its hunter.
If kale ever becomes extinct - you can blame me.

When it comes to kale chips, I am a merciless hunter. I ferociously eat every one in sight, often not pausing to breathe, until before I realize it - 3 bunches of kale have disappeared. Every time I make kale chips I say to myself "Okay Emily, THIS TIME you need to leave some for others."
It never works.
Today I wanted to make kale chips because I had extra Pad Thai sauce and Hemp Sauce which I planned on using as the dressing. Well, my mom and I went to the market and bought 3 bunches. When I got home this evening I dressed them all and stuck them in the dehydrator to blossom into glory.
I tend to eat them at all stages - when they're totally fresh with just the dressing on, when they're starting to soften and get gooey as they warm up, and when they're finally a crunchy chip. So by time they reach the last stage, most of them are gone anyway. Then before I know it, I've eaten the rest. This is why I never have pics of kale chips on my blog.
You have no idea how much will power it took to NOT eat these chips before I took pictures, AND to save a (very small) bowl for my mom for when she got home.
Anyways: moral of the story - kale chips are ADDICTIVE. Be careful.

1/3 cup nutritional yeast
1/2 T curry powder, or any other spicy powder you adore
1 T miso
Splash of Bragg's Liquid Aminos
Juice of 1 lemon
1 teaspoon salt and pepper
Clove of garlic, chopped
Water, as needed
2-3 bunches kale
Blend all ingredients - except kale - in blender until creamy and smooth. It should turn into a thick, delicious, saucy thing... unless you or I forgot an ingredient. Add other things to your liking. Set aside.
Wash kale and break into large chip sized pieces (they will shrink a lot). Put in your biggest bowl and throw in the sauce. Mix it in with your hands - this is surprisingly enjoyable - until all the pieces are evenly coated. Try one...
Yep. I know. You're gonna eat 'em all.
Now put them on dehydrator trays and dehydrate for a couple hours, or until they're crispy. If you don't have a dehydrator, just use the lowest temperature on your oven.
raw noodle dish inspired by pad thai - oh yes
*Strictly speaking, the sauce isn't totally raw. But c'mon. What're ya gonna do. If you really want a 100% raw sauce, make a blend of tahini (or other nut butter), chili, tamari, garlic and ginger.
The pasta of course, is just zucchini, sliced on le mandoline. Good news! Soon I will be purchasing one of these puppies from Organic Lives. Yippie! However, if you can only afford a mandoline - no worries! As you can see, they work just as well.
The sauce is inspired by authentic Pad Thai sauce, but not the same. Thankfully I had my mom to guide me; she and my dad lived in Thailand for years before they had kids. Learn more about the origins and traditional ingredients of pad Thai here!
Real Pad Thai is made with rice noodles, a tamarind-, chili- and fish sauce-based sauce, and topped with cilantro, chili paste, peanuts, bean sprouts and perhaps other veggies.
Let's eat RAW PAD THAI! (and Dilly Bars for dessert, anyone?) Nom.
Radical Raw Pad Thai: serves 2, more or less
Sauce:
1 Tb tamarind paste
1 Tb chopped ginger
1-2 cloves chopped garlic
1-2 Tb agave (or 1-2 dates)
6 Tb tamari
2 Tb chili sauce
3 Tb tomato puree
1 t chili flakes
Juice of 1 lime
1/2 t coriander
1/2 t paprika
Pinch of cayenne and chili, if you want it hotter =)
Raw oil, if desired
Water, as needed
Pasta:
1 large zucchini
Garnish:
Cilantro
Raw jungle peanuts!
Bean sprouts
Hot sauce
Scallions
Marinated mushrooms and broccoli (put some tamari on and warm for an hour in the dehydrator)
To makes the sauce, put all ingredients in blender and add enough water to just cover them. Blend until smooth, see if you want more heat, or anything else.
To make the pasta, slice the zuc on a mandoline or spiral slicer. Add enough sauce to evenly coat the noodles. Garnish. Eat! The heat of the chili makes this dish perfectly warming on its own - no heating necessary.
In other news: while I enjoyed my Pad Thai, the fam had a sandwich night. We used the best bread in the world, baked yesterday with love at The Common Loaf Bakery in Tofino. My mom also baked some eggplant (which I could not resist, and added to my pasta), tofu, and laid out a bunch of different toppings.
You know it was a successful dinner when my little brother, Daniel, was fighting for the last tomato, sprouts and lettuce!
EAT THIS NOW.
Nom. I don't say that a lot, but I do when it's necessary. I don't know what it is about this meal, but I've made it several times and I always want more.

Note: I never measure anything, and this is always a total improv dish, it really doesn't matter. But I've given general amounts for the sauce.

That's all I can say about it - it's pure and simple yummy.

Savory Spicy Veggie Wraps: serves 1-2
1 Avocado
1/3 cup corn
1 Bell Pepper
2-3 Mushrooms
Red onion?
Cucumber?
Tomato?
Carrot?
Any other veg you like/have
Chop all the veggies (and avocado) roughly, put in a bowl and pour on a little tamari. Let them marinate while you do the other stuff.
Spicy Sauce: makes about 1/3 cup?
1 Tb mustard
1 Tb miso
1 Tb nut butter
2 Tb nutritional yeast
Salt & Pepper
I also add hemp seeds and other spices if I want.

Finally - prepare some rice paper by soaking it in hot water for a minute or two until it's super pliable. OR just get out some nori seaweed sheets. Spoon a little of the sauce into the nori or rice paper and then load on the veg mix! Wrap it up. Repeat until you use up all the veg.
Want another really easy way to do this? Don't even make the sauce - just put tamari on all the cut up veggies and mix in the avocado with your hands, mashing it up a little - it creates a salty, creamy avocado sauce all on it's own! I did that the other night and it was great; saves you time.
