Keepin' it simple and wholesome, as per usual. I made this a couple weeks ago and posted a pic on Instagram, and I thought it was so pretty and delicious I decided to share the recipe with you, 'cause you're awesome, and so is this bowl of happy food. That is all. (Like I said - keepin' it simple.)


1 cup cooked black beans
1 cup cooked wild rice
2 steamed potatoes
1 cup salsa or tomato sauce
Handful cherry tomatoes
Handful chopped cilantro 
Pinch of turmeric, paprika, salt and pepper (if desired) 

Throw it all in a bowl. Yessss. 
Note: add whatever other spices or flavourings you want! This would probably be outta this world with the addition of an avocado. Then again, when is that statement ever false?

Oooooh! What a lovely thing to wake up to (6.15 am over here)! Especially for an adopted-Irish person who loves potatoes.

Something incredible is happening: I believe someone's pulled my sweet tooth! I simply crave tons of fresh veg these days instead of my usual sweet treats. Even if those are healthy.

It's quite a journey, this luxury-fresh-food eating thing <3

@Miss Lindsey - 1:2 ratio with rice and water (I usually use 1 cup uncooked rice with 2 cups of water), put it in the rice cooker and let it cook until the rice has soaked up all the water : )

I've just had this for my tea. I cannot get over how filling it is! I probably only had about a third of the rice stated in the recipe (I supplemented it with MOAR TOMATOES!) and I had to have a break halfway through! It was so beautiful and delicious though, I wouldn't let it defeat me. I ate every. last. scrap. Divine! Thank you!
