they are delicious! they remind me of a raisin butter tarts. imagine if a fig bar and a raisin tart had a baby (don't worry about logistics here okay, humour me)... then make it raw and vegan and you've got one of these! yum. i won't make this post too long because you probably just want the recipe BUT ALSO my friend just got here and we gotta make some juice! WOO.
as far as my review of the products goes - i love shiloh farms! the figs were delicious, satisfying and full of flavour; the almonds tasted really fresh and actually RAW; i am going to sprout the alfalfa seeds and let you know how that turns out.
raw fig bars: makes 9 big bars
crust:
1 cup walnuts
1 cup almonds
1 heaping cup raisins
1/4 teaspoon cinnamon
filling:
2 cups dried figs, soaked in water for 2-4 hours (keep the water!)
1-2 tablespoons maple syrup (optional)
1/4 teaspoon salt
topping:
1 1/2 cups pecans
to make the crust: process the nuts in your food processor until you get really fine pieces - like flour. alternately you could use oat flour here. add the raisins and cinnamon. if it's not sticky enough, add some dates or maple syrup. press into a 9X9 pan or shape it yourself on parchment paper, that's what i did.
to make the filling: blend the figs, maple syrup/agave and salt in the food processor (no need to wash it yet), adding the soak water as needed to make it smooth but still quite thick. spread this on the crust but keep a little less than 1/4 cup of it in the food processor...
to make the topping: add the pecans to the food processor (with the leftover fig mixture) and pulse until there are small nut chunks, but not too fine. sprinkle this on top of the fig filling and press down a little. cut and enjoy! i sliced the sides off mine to make it a nice square so i had these extra strips of fig bar... i made fig nut milk! just blend it with water.

I just finished making these! They were so easy - even in my tiny kitchen and with my cheap food processor!!
I want to start eating more raw food but so many things need a vitamix and/or a dehydrator and I don't have either :( I'm away from the house for up to 15hrs on work days so I hope these will keep me going this week (provided I don't eat them all now!!). I'm hoping recipes like this will help me give up store-bought vegan snack bars.
I didn't have to use any of the fig water and I'm trying to think of a use for it...seems a shame to throw it away. Maybe I could use it in a loaf of bread with chopped up dried figs. What did you do?

Yay! That's great news, Penga :D If you have at least a food processor, you can make a lot of the bars on my blog. When it comes right down to it - they are all basically dates and nuts thrown together in different forms with different flavourings.

I've never made anything with figs before but I love the way they taste. These bars taste so amazing! I have to invest in a food processor...my little 8 year old blender is NOT cutting it...litereally. Thanks for the recipe!
I made these tonight and it turned out fantastic, although I didn't have all of the ingredients (story of my life, good intentions and all that), so had to improvise. I used dates instead of figs and so, although I still soaked them, they didn't require any additional water. I also ran out of pecans by the topping stage so improvised with a few pecans with almonds, cashew nuts and Brazilian nuts. It turned out great!! My only difficulty was the "crust" was so crumbly, the middle layer ended up sticking to it and made it difficult to spread. Then, when I cut into it, the crust sort of crumbled into the rest of the mix. The combined flavor was/is wonderful, just not exactly the texture I was expecting. I think next time I would make the crust, then freeze it for 10-15 mins before adding the fig/date layer...
Smart thinking. If the crust is ever too crumbly, just add more dates =)

I used fresh figs instead of dried... it came out to be a little too wet and mushy. Good nonetheless. Cheers!
Any idea of what changes to make for fresh figs instead of dried? When my fig tree gets ripe in the next month or so I will have soooooo many. I dry them but would love to make something like this with the fresh ones.
