PEANUT BUTTER OAT BARS


I threw this recipe together for a potluck on Sunday and there are two things you need to know about it: it takes 10 minutes to make and disappears even quicker.

I will be snacking on these bars before and after the gym, but honestly they'd be good any time for any reason. I didn't eat peanut butter for a couple years because I thought almond butter was healthier or something, but now that I'm back on the PB train I shake my head at having ever left. IT'S SO YUMMY. And it's perfectly healthy: with a decent amount of protein, fibre, and all that fun stuff. Comparatively it's pretty much the same as any other nut butter, as far as I can tell. And anyways: life is too short to abstain from peanut butter / things you love.

PEANUT BUTTER OAT BARS

1 1/2 cups rolled oats
3/4 cup pumpkin seeds
2 tablespoons hemp seeds
2 tablespoons chia seeds
1/4 cup cacao nibs
1/2 teaspoon vanilla powder
1/4 cup peanut butter
1/4 cup coconut oil
1/4 cup maple syrup
Pinch Himayan salt

Stir together all the dry ingredients then stir in the wet and mix until everything is evenly coated and the mixture is thoroughly moist and sticks together (i.e. isn't crumbly). Press into a lined bread loaf pan and freeze until solid, around 10 minutes. Optional: top with chocolate drizzle!
