Thus, an ice cream dome cake appears.
This recipe is very similar to my last one (fruit popsicles with coconut milk) but I added bananas to the ice cream part because... well, bananas. I ended up having extra room on the bottom of the cake so I improvised and added a brownie crust. It was a good idea. FACT: brownies are always a good idea. I also discovered that if you ever have extra raw brownie mix and you mix it with banana slices, your world will be turned upside down and angels will sing.
True story.
As with all my ice cream cake recipes - be patient and let your cake slices thaw before eating, it is so much better. Not only will you skip the potential numerous brain freezes, but the cake will also become creamier and you'll be able to taste the flavours more. Just for your information, this will be my last recipe for a little while because I have my final exams coming up, and I also have a bit of a project I am working on which I may or may not eventually tell you about. Much love.
Stay cool and fruity.
fruit + coconut ice cream cake with brownie crust:
Ice cream:
400 ml fresh raw coconut milk (or 1 can of store-bought)
1/4 cup raw cane sugar (or preferred sweetener, to taste)
1 banana
Brownie crust:
1/3 cup walnuts
1/3 cup raw oats (or buckwheat groats for a gluten-free version)
2/3 cup dates
2 tablespoons cacao powder
Fruit:
Whatever fresh or frozen you have or like, about 2 cups
Prepare the cake vessel: find a bowl that can hold about 6 cups, or use a small dome cake pan and line it with plastic wrap, tin foil or whatever. I used a dome shaped colander and plastic wrap, it worked fine. Alternatively you can just make this using a normal cake pan. Line the sides of the pan or bowl with your chosen fruit.
To make the ice cream: blend all ingredients until smooth. Pour into your pan or bowl and put in the freezer until solid, about 3 or 4 hours.
To make the brownie crust: put the walnuts, oats and cacao in your food processor and pulse until they become a flour. Add the dates and process until it starts to stick together. Press onto the "top" of your ice cream cake (it will become the bottom when you flip it later). Put in the fridge for about an hour to let everything set. Then carefully flip your cake onto a plate and take off your lining - voila! Decorate as you wish, slice, and let thaw before eating.

I just have to say: WOW!! What an amazing recipe! I love both this version with the brownie crust (I totally agree, brownie can never go wrong), and your previous post with the popsicles - your pictures are beautiful and it just looks heavenly!! You rock!!
AMAZING!!!
good luck with your exams
xx
Another "yum!" I'm thinking that crust + banana would be an ideal breakfast food. ;-) Happy examining. :-)
Thank you!! Much love.
Em
Cheers! Just finished one and feel great.
You would be correct in thinking that ;)
xo
I'm almost too impatient when it comes to eating frozen foods, and then it hurts my teeth to bite into them! Haha. This looks GORGEOUS!
Will miss your frequent posts but good luck on your exams... and you have left us all a ton of awesome stuff to make in the mean time! PS beautiful photos
waw, this looks really nice, i want to make it for my daughters birthday party. i wonder if it would be ok to make it a day in advance and let the whole thing stay in the freezer for a day? i also wonder how you put the strawberries on the side, did you do that in the end after it had frozen? eva x
Thank you! <3
Thanks! Yep that's no problem. I stacked all the fruit on the edges and the managed to stay on top of the fruits beneath, then I poured in all ice cream and let it freeze, keeping all the fruit in place. When I flipped it over - they were at the bottom =)
I have to say it: wow!!!!
I love to come here and feed my eyes!
Beautiful as Always!! Have never tried coconut milk. Need to give it a try!! Big good lukc on your exams. Will keep our fingers crossed for you! Big hug from Amsterdam
i'm gonna give it a try and i'll let you know... cause in your picture, its like the strawberries seem like "floating" and i was like, how did she do that in a bowl?, anyway, i'll try and let you know, thanks for the inspiration! x
omg, this. is. beautiful! It's incredible how you can create these wonders!
Oh MY! This looks fantastic!! And I love the shape of this cake too :D
Beautiful pictures as always!
So beautiful! I love the combination of fruit with the ice cream, I'm all for fruit desserts and so many ice cream cakes these days are filled with cookie dough, etc. Not that there's anything wrong with cookie dough. ;) But, fruit! Coconut! Yum.
who eats all the things that you make?
Haha good question - I have a big family, a hungry boyfriend, and a big bustling house =)
looks fantastic on your pictures, but my attempt was a complete failure... i'm gessing i used too much water for the cocosmilk, the thing stayed really "watery" and wouldnt really freeze, so i let it freeze more(too long). i used a colander as well (shape is perfect), with some plastic on the inside. so the plastic was really stuck in the ice, and it also wouldnt defrost,, i let it defrost overnight, so it became liquid again,(with pieces of plastic in it :p ) and it tasted , not good, so i trew the whole thing away;. above all, i broke my blender, blending the coconut and the crust (wich was actually great, the crust, but after staying with the icecream, not anymore :/ )
oh NO =O I am really sorry about that.
If something is too watery, just add more dates or nuts or coconut. And also - if you don't think your blender can handle it, just use a can of organic coconut milk. =(
hehe that's my goal!
I miss the posts but I'm swamped with exams too right now so I totally feel ya. Hope they're going well. My favorite midnight snack right now: mangoes in coconut milk. Yum!
How do you add the fruits in? :S Also, how did you get some of that brownie crust in the middle? And can you substitute cashews for walnuts?
Sorry for all the questions...haha. Looks beautiful :)
mmm sounds divine :)
Did you read the directions already? I answer the first two in them :) You can certainly sub in cashews for walnuts!
Oh my god, I'm sorry. I was having one of "those" days where I miss everything right in front of my eyes :P Thanks for answering so quick anyways :)
I LOVE your recipes. So good!
This was great! Instead of the sugar in the ice cream, I added raisins and leaving little raisin bits in the ice cream was divine!! Love it! <3
i read it three times but still dont see how you got the brownie crust in the middle of the cake?
Oh you mean not the bottom part but the chocolate you see in the center? That was an accident :)
man I sure wish I could be your apprentice haha
Looks awesome! I've been all about coconut ice cream this summer! Thinking of making this for my son's first birthday. I have an ice cream maker, do you think it would work good to make actual ice cream first then put in? Also, how far in advance could I make it do you think? Thanks!
Sure! Um since it's frozen you could make it quite awhile in advance... like weeks if you want :) Just store it right and let it thaw a bit before serving!
can i use granola instead of raw oats and how did you accidentlly get brownie in the middle i want to accidently do that also lol
That'll be okay! Might fall apart but it will taste good! The brownie part was not accidental, but the hard chocolate in the middle was, it sunk to the middle lol.
I tried this and it ended up being ok. A 6/10 for my first attempt. The ice cream part was very icy. I used a can of coconut milk and a banana. Is it meant to be creamy? Mine had a very icy texture. Any idea where I went wrong? Maybe try coconut cream next time? Any help would be much appreciated:) the brownie mixture is sooo yum!!
Hm im sorry about that, maybe try making the coconut milk into ice cream first, then spreading that into the mold...
Looks so lovely!
I am just having some troubles converting cups to gram etc. :(
Can you make it a day or 2 in advance? Thanks
@Anonymous - yep :)
I would love to make this cake because it sounds and looks amazing but I don't really know what half-and-half is. Is it some kind of cream?
