Pie.
I had been wanting to make a coconut cream pie for some time, because I'd seen a recipe that showed whipped coconut cream - it looks identical to dairy whipped cream! Whatta miracle. There isn't anything I could possibly want or need that doesn't have a superior vegan and/or raw alternative.
This pie made everyone happy, and helped Amanda feel better =) It's full of whole foods like fruit, nuts and coconut. Eat it up for breakfast, dessert, or both!
I don't know why I haven't made a pie like this before. I guess I'm just lazy. Also, there's always other recipes I want to try, and things to do, so the perfect opportunity never struck. Til yesterday! We both wanted to make food (I always do so that's not saying much), I had been waiting to make a banana cream pie, I had chilled coconut milk ready in the fridge, aaand! - oh. Wait.
"We don't have any bananas."
So it was off to the grocery store. Not exactly what me or Amanda wanted to do in our PJ's on a super-windy, cold Saturday afternoon. But we took it as a challenge. We were successful. So we had all the ingredients (including love) to make this wonderful creamy treat.
Here it is now for your viewing pleasure! And mine.
The chocolate cream part is basically avocado chocolate pudding; the coconut cream is whipped coconut milk, and the crust is just nuts and dates. The bananas were themselves.
Chocolate Banana Coconut Cream Pie: makes 1 glorious pie
Crust:
1 1/2 cups nuts
1 1/2 cups dates
Salt and/or vanilla, if you want
Salt and/or vanilla, if you want
Chocolate Cream:
2-3 avocados
1/3 cup agave
Pinch salt
1/2 t cinnamon
1/4 cup cocoa/cacao
2 Tb mesquite (optional)
2 Tb melted coconut oil
Whipped Cream:
1 can chilled full fat coconut milk
3 Tb raw powdered sugar
Seeds from 1/2 vanilla bean
To make the crust, pulse nuts in food processor until they're the size of crumbs. Add dates and pulse until it lumps together. Feel free to add cinnamon, salt, vanilla or more sweetener here. Press into your favorite pie pan and stick in the fridge.
To make the chocolate cream, blend/process all ingredients until silky smooth. Nom. I could just eat this. Now slice 3-4 bananas and put them on the bottom of the crust. Spoon on the chocolate cream and put on another player of banana slices. Set in the fridge again.

OH MAN! I was in walmart today and they keep putting those boston cream doughnuts out right near the front door, ugh! it happens, i wish i could say i was far enough along on my raw food path that things like that wouldn't make me look twice, but i can't yet. but this pie looks amazing, as i followed the photographs while scrolling down watching pieces of this pie disappear my imagination had me believing i was actually savoring every bite, until that last picture of the empty plate...and a tear came to my eye. oh well! it was great while it lasted.
Hahaha don't blame yourself for wanting doughnuts. It's your brain wanting you to survive, not personal weakness! We all want doughnuts! AND PIE! So all you gotta do is make a healthy version =) Make this yourself and you can REALLY enjoy every bite ;)
That looks amazing! Another one to add to my 'to cook' list. Damn that list is getting long. I bet anyone would feel better after eating this & no one would guess it was healthy if you didn't tell them!

Wow, this looks AMAZING! I'll definitely make this for my family when I visit them this summer! Unfortunately, I can't make it for myself because I found out, along with wheat/gluten, I'm allergic to bananas (TERRIBLE!) and cinnamon (WORST ALLERGY EVER!!)... maybe I'll just make myself a big bowl of the coconut whipped cream ;D

hmm, that would happen if the coconut cream wasn't cold enough, or if you took more than just the fatty stuff at the top. it's happened to me before too. still tastes good though, hah
I am such a glutton for delicious and nutritious raw desserts. This really looks incredible and the ingredient list is so short!!! I am going to see if my boyfriend notices the difference.

This looks fantastic! Just what I was looking for :) I want to make it for a dinner I am having tomorrow and always try to prepare as much as possible in advance. Do you think I can make it completely ready today (minus the sliced banana on top) and it stays fresh in the fridge? Or should I prepare the crust and the chocolate layer and add the cream the same day?
you could probably put everything together except the banana and it would be fine. tell me how it goes :) this is one of my favourite recipes.

Instead of avocados could I use bananas?? I have no ripe bananas right now!
You could use bananas OR avocados :) Both are delicious, but bananas definitely make the whole thing taste more like bananas. Not a bad thing for me.

the fat you skim off .. is that just used as coconut oil?. i have never worked with coconut milk before. thanks for being patient with me.. you rock!!
ok i cant get my cream to whip up, i took the fat off. i had about a half can of milk left. not sure why it was cold.. i let it in the fridge 1 1/2 days to be sure lol what do we do with the fat we took off. oh well my pie is looking yummy.. will try again with the cream another time..
The fat you scrape off the top is what you are meant to whip up =)
It's not pure coconut oil, although it does contain coconut oil. It's basically coconut cream. No worries =)

Today is my sons 1st birthday and my husbands 30th. Made this for their cake but using oats instead of nuts in the base ( as we are not allowed nuts at the play centre we are celebrating it) also banana instead of avo as they are super exp at the mo. turned out awesome! Made myself a mini one to scoff in secret. Nomnomnom so good! So good to have a cake everyone can enjoy that's not loaded with sugar n stuff.

I am a recent fan of your blog and the recipes. This pie looks amazingly sluuurrrrpppppy. Surprisingly, one does not need to bake in the oven, right? This is one of the few blogs that I have come across which explains in simple words and I see that you have also answered many questions (which is very seldom in other blogs).I was wondering what is the size of the cup when you give measurements (1/4 cup). Could you please specify in desi litre or milli litre?

I have read that coconut oil is not the healthiest choice due to its high levels of saturated fat. What is your opinion?

And also research the benefits of coconut oil for yourself. It's a controversial food but I personally feel that it's a super food and it works great for me. If you decide to try it - keep and open mind and see how it makes you feel :) Your body is the best judge.

And be slightly sticky and kinda gooey :) They taste like fudge.

I made this cake today. I was really excited, because I'm now getting more and more into raw and vegan. But I don't understand why my coconut milk didn't whip? I took the fat away I tried to whip it, but nothing happened. So I just served the cake without the whipped layer.
My boyfriend really loved it. I liked it as well, but next time I think I will use something else instead of walnuts.
Anyways, I wish Emily you could cook to me, so I could see how easy it actually is, if a pro does that. :)

Holy Crumb, this was soooooo tasty. The hit of the birthday party! I will never make fun of vegan raw desserts ever again. I did have to add some melted chocolate chips (vegan) and a banana to the 'pudding' to get it to not taste like avocados, though. I think the ones I used were particularly strong tasting! I also added a pinch of chipotle powder to give it a Mexican chocolate style zing. Coconut creme whipped up great. Thank you so much for making me eat my past words about vegan desserts! Can't wait to try more of your recipes!
Will be making this for Thanksgiving this year (along with like, 20 of your other recipes!)! Just got my kid and hubs to realize that eating plant based food can be just as tasty as the junk they seem to love! Thanks for the amazing blog and delicious recipes :)

Love your recipes, this one is the new fav of my boyfriend (first it was the banana, strawberry mint pie).
I just had one thing, I found the crust to be quite 'moist', not very crumbly, if you know what I mean :D It wasn't really a crusty crust, is that how it was supposed to be or did I do anything wrong?
Anyway, I keep making your recipes because they are so darn easy and delicious!
Yay :D So happy to hear that. If it was more gooey than crusty, it's 'cause you added more dates than needed. Next time, add more nuts.. or less dates :)

You are a stunning artist! I just transitioned into a predominantly raw vegan lifestyle this year and it has been a great eye-opening journey. Thank you! And yess!! Raw food can heal a plethora of illnesses :) Eating right can save lives. I hope everyone likes the recipe :) They are cacao nibs on top, you don't need them but they add a cute decoration. You could use something else though, like lemon zest, berries, nuts, etc.

It'd be okay if you left the coco cream in the pie overnight but it's best served fresh right after it's been whipped.
This is seriously delicious!! I was licking the chocolate from the processor! The crust was a little thick though, I maybe used too many nuts! Looking forward to making the whipped cream soon! Thank you so much for sharing!

Amazing pie! Everyone had nothing but good things to say and I felt very proud of myself.
This looks AMAZING and I'm looking forward to making it for my work's "bake off" (minus the bake!) One things - I noticed bananas aren't on your ingredient list! Wanting to make sure everyone gets the full experience? ;-) I kid, but I couldn't definitely see people copying the list and forgetting the bananas! (I actually almost did just that!)
I have made this pie at least half a dozen times now. Everyone that tries is cannot believe it's raw vegan and "healthy". I use macadamia nuts and almonds for the crust but that's about my only modification. It's one of my favorite desserts ever! Thanks!
