CHOCOLATE PEANUT BUTTER PILLOW COOKIES


This post is fully inspired by Amy Lyons' recipe in Fragrant Vanilla Cake. Her recipes are always so decadent and drool-worthy. I gave these to a bunch of friends during the week and everyone seemed to love 'em. I ate about half of them myself so I personally promise: they are delish. I wasn't sure about using so much flax seed in the cookie part but somehow it makes them addictive!? And hey, ya get a bunch of omega 3's or something. Most importantly: you get chocolate peanut butter bites all day long. Enjoy!

CHOCOLATE PEANUT BUTTER PILLOW COOKIES
[ inspired by Amy Lyons' recipe in Fragrant Vanilla Cake; makes 10 cookies ]

Cookie:
1 cup rolled oats
1 1/2 cups shredded coconut
1/2 cup ground flax seeds
3/4 cup raisins
1/8 teaspoon sea salt

1/4 cup peanut butter

Chocolate:
1/2 cup melted coconut oil
3/4 cup cacao powder
1/4 cup maple syrup
1/8 teaspoon sea salt

To make the cookie: grind everything except the raisins into flour in a blender or food processor. Add the raisins and process until it becomes a dough that holds its shape when pressed between two fingers. Roll out evenly, as thick or thin as you prefer, and cut into cookies. Leave the cookies to harden in the freezer.

To make the chocolate: whisk the ingredients together until smooth.

Assembly: scoop some peanut butter onto each cookie, stick 'em back in the freezer until solid. Then dip them all in the chocolate! Throw back in a freezer for a few minutes, then store in the fridge or freezer and enjoy whenever you desire. xx
