I've made variations of this pie/tart/thing a few times now (click here and here for past recipes) and every time the result is a winner with the crowd I serve it to. It's one of those desserts where you can expect the plates to be licked clean. Why? It's simple, really. You have a crust that tastes like butter tarts, followed by the most delicious and healthy chocolate pudding you can imagine, covered in whipped coconut cream and topped off with goji berries. This here's a no brainer, folks - make this recipe immediately.
CHOCOLATE PUDDING TART WITH COCONUT CREAM & GOJI BERRIES
Crust:
1 cup walnuts
1 cup dates
Chocolate pudding:
1 avocado
2 tablespoons coconut oil
2 tablespoons coconut nectar (or date paste)
2 tablespoons cacao powder
1 teaspoon vanilla extract
Pinch of Himalayan salt
1/4 cup nut milk, as needed

To make the crust: pulse the walnuts into powder then add the dates until it all begins to stick together. Press into a lined tart tin (mine was about 8 inches) and put in the fridge.
To make the chocolate pudding: blend all the ingredients together in your food processor until smooth and thick... it should taste a-freaking-mazing. Spread evenly into your crust.
Make the coconut cream, spread it on top of the pudding layer, and put back in the fridge overnight. Serve with goji berries, coconut flakes and cacao nibs. Nom.

Its hippy mom , nice recipe Ill be obsessively going thru your recipes to pull some for Christmas , your food is considered gourmet, its so delicious and simple to make. Simple is good...its filling , healthy , impressive, and i can eat all of it and not feel guilty , yet still fill content.

It is so tasty chocolate pudding tart with coconut milk vegan ice cream.
The choc. pecan cake isn't coming together too well for me. I know it's because the spring-form pan I used is too big, but that's all I had. I tried to make more so it'd be thicker, but ran out of dates. Should I try pressing it into a smaller bowl or pan or is it too late you think?

Turned out okay! I decided just to leave it thin. I thought it'd be too much of a mess to try to transfer or layer it or anything. But regardless of size/shape I'm sure it'll be delicious!

Nope, but with raw food, you should expect varying results, because every raisin and walnut, etc. is unique and different :) It's real food! <3
Yes! you probably did have to be compelled to sign for the package! I nearly incomprehensible that box as a result of the mail guy did not walk to our actual apt door- simply left a note voice communication he was there- at our community mail area. quite weird. Sorry you guys did not get it!

Emily, just to let you know that I made a small tart using this recipe of yours. Instead of walnuts used almonds for the base. It came out incredibly good. Now I have to make a big one (did't have enough ingredients the first time). Thank you for the inspiration. Maria (in Portugal)
